Abstract

Capulin fruits are a potential source of bioactive compounds, which can be used primarily in the pharmaceutical, cosmetic and food industries, the present research aims to characterize microcapsules of capulin pulp obtained by ultrasound and microwave-assisted extraction. The microcapsules obtained were classified into three groups: fresh, freeze-dried and rehydrated. Each group underwent characterization, evaluating their dimensions, shape, texture, color, yield, phenolic content, and antioxidant activity. The results showed the microcapsules ranging in size from 1.25 to 3.05 mm in length and 1.15 to 2.4 mm in width; spherical and irregular shapes; rough and smooth textures; and colors ranging from yellow-orange-pink to green; average phenolic content of 0.79 and 1.23 mgEAGg-1ps and an antioxidant activity of 5.47 and 6.23 mgTEg-1ps.
